During my graduation research at the Art and Economics study at the University of the Arts Utrecht, I investigated the following issue: How can we create a new coffee experience for coffee lovers by using music that enhances the flavor notes of the coffee?
The research focused on the influence of musical tones on the perceptions of the taste notes of coffee. The focus was on the perception of sour, bitter and sweet. I was able to investigate this question through literature and field research.
Key findings:
Low pitched music enhance bitter tasting notes
Higher pitched in music enhance sweet tasting notes
Through the use of music, people perceive flavors in coffee differently
In addition to pitch, genre and tempo can also influence taste perception, as can other sensory influence the taste such as form, color, and thickness of the cup.
